Maybe play with your Throttle / Drag Brake / Break. When I jump, if I need the nose up, stay on the throttle. If I need the nose down a bit, I let off on the throttle and let the drag brake slow it down a bit. If I need the nose down a log, I hit the breaks. Maybe you are landing with the wheels spinning to fast, or on the breaks?

Make sure your tires aren't hitting the wheel wells too. I have Jeremy McGuigan's setup on my truck right now, which uses the EB48/EB48.2 rear shock tower, and my truck jumps great. It also jumped awesome with the recommended setup (Matt Wolter / Joe Bornhorst) and it jumped equally as well.

I am looking for a motor with good runtime for bashing on a small dirt track:
I currently have:
Tekin RX8, Hobbywing 4700, 2s packs.
I dont have the truck with me so I am not sure what the gearing is currently.
I am looking at HW 3600, 3800, 4300. They come in 3652 or 3660 sizes.
What would be a good KV and motor size.

I did once. found the problem to be I had an extra washer between the two haves of the diff. No problems since. Also check the red O rings at the out drives to make sure they are not damaged. I'm extra careful to get Spur or ring gear seated correctly on to the diff case and then tighten all the screws in a hex pattern until they are all torqued evenly as best as I can get them.

Don't think anything I said would help that, unless a screw holding the diff together is loose or not seated flush and is catching on the gear box, but leakig diff fluid should not be causing the truck to stop unless the diff melts then you have bigger problems!.
