You can run upto 64 steps on the ESC...

You can run upto 64 steps on the ESC (boost+turbo).

You can then turn the motor timing up until its hitting its temperature limit (about 75 celcius for the SP motors).

Sounds like a dodgy connection somewhere. Check the connections/plugs to the lipo and receiver. And try a different lipo if you haven't already, in case there's an issue in the internal lipo wiring. ...
