Smaller spur= more top speed. Btw I'm running a hpi 10.5 with 76 spur and 29 pinion + boost. I think you can gear up a lot.

but i dont want it to be uncontrollable when you pull the trigger i am looking for a bit more top speed but no more low end torque etc as i have plenty to make all the jumps with out it being to wild out of slow speed corners etc

temps would say that as well as i only get to 40 deg C after 10 to 15 mins run

A smaller spur and larger pinion will give more top speed and make the car more driveable. Probably best to start with a smaller spur, this will bring the motor forward a bit (the 210 is a bit heavy in the rear if you run rear motor). Keep an eye on the temperature and go to a bigger pinion if the temps allow.
so thats 81 / 27 from 87 / 25 ?
is that about right ? or go bigger i think i have a 28 pinon as well

I think different brands of motors need to be geared differently, but 81/27 seems like a safe place to start. Just keep an eye on the temperature. If it gets hot try a 26, if not try a 28.
