Hello
The throttle servo you can go low profile and are then able to lower the servo a little on the radio tray. For steering I would get a standard size.
You should be pretty right with any of the major brands (eg Futaba, Sanwa, KO etc).
For throttle you still need a little torque so it has enough strength to get enough brakes.

Interested in getting 2 SAVOX 1251MG, with the following specs.
Speed @ 6.0V: .09
Torque @ 6.0V: 125 oz-in / 9.0 kg-cm
Type: Low Profile
Gear: Metal
What do you think? (I know it may not be as top as the brands you mentioned above)

Yes i have used this Savox servo before as a throttle servo and it is good value for money. I would go with a different brand for steering servo as it under more load, but this is just my opinion.

You have to take people's response with a grain of salt as they will always be pro the brand they are driving. Both are good cars at the end of the day and if it was me I would be deciding on parts availability and support (other racers at track and online) unless you can find someone who has owned both and raced them both and can give more of an insight.

125oz is more than enough for either position. "Back in the day" 125oz would have been a monster and many races were won with weaker servos than that on cars that weighed a lot more than the current cars.
I personally have been running Orion servos (made by Savox) for 3-4 years and now just switched to the Savox badged servos. I now run the SV154MG servo for both throttle and brakes. Its a low profile so its lighter and its HV so I can run a straight lipo battery which is also lighter and smaller. This servo coupled with the lipo gives me plenty of torque and speed and using the same servo in both positions means I don't have to carry 2 spare servos with me, I can carry just one if I want.
I bought 5 of them at the IIC electric race in Las Vegas (I went to watch) for $60/ea. I thought it was a good price and a good value for a servo with those specifications. I figure with 5 of them I am covered for a while.

I understand KM Racing pinion gears fit on the Xray clutchbell however i have not tried it myself to confirm. These maybe cheaper however they may not last as long as the original Xray ones which is worth considering.
