Looking to find out if these batteries will work. I feel they will as its just 1.5mm longer (width of vehicle)

I want to upgrade the ESC and motor to a brushless & lipo capable combo and I was looking at the HobbyWing Quicrun 30A Waterproof ESC (Quicrun-WP-16BL30). Has anyone had experience with this ESC? Also which motor would I be best to pair with it?

You could use either a Castle 1818 4 pole motor or a Toro 1/18th 4 pole motor. Both are great options. For $35, I went with the Toro setup and I will be testing it up against the $100 Castle Micro Mamba system. You could also use the Dynamite Micro Fuze esc which is rated at 30 amp and waterproof, same one that came with the Losi Mini-8ight.
