Why don't sensored brushless motors come with the wires already soldered like sensorless motors?

My guess is because their intended audience is a higher skill level or competition and customizing wire routing is expected. Leaving wires off saves money.

Mostly ESCs already come with wires and since most people in racing (where sensored makes the most difference to sensorless) try to avoid using connectors and also use more or less optimized length cables, most modern sensored motors come without cables attached. But IIRC, even in the old brushed days, most better motors came without cables.

Because the racer wants no plugs and the ease of changing motors so these motors do come with solder tabs.
