Which motor will be better for which track? And why? There are special versions of Orion/Peak V2 12x1 HS and 12x1 HT. Please tell me where should be used 12x1 HS and 12x1 HT and 12x2 or 12x3?

Revs are similar, if anything a double will be revvier than a single.
The main difference is the feel, a single feels punchier, a double is smoother.
Orion did HT and HS versions of the 12x1 to get the most out of the old european 12 turn limit. HT is torque biased, for tighter tracks, HS is revs biased for larger tracks.
12x2 and 12x3 were less widely used. If the grip is low, and the track is large, I would probably go for a triple rather than a double. Not much in it though.

the hs stands for high speed or more rpm's, i believe better for larger tracks. ht is high tourque, i believe better for small tight tracks, the arms are wound on different web size blanks. the orion site has a v2 chat that gives more info than you can ask for and very detailed.
