Do I need to worry about how many volts a receiver uses when choosing my battery?
For example associated's receiver TRS401SS specs lists battery power as as "1.8 - 6v". Does this mean I cannot use a 3s lipo in my car becuase it pumps out 11.1 volts? Or am I missing something?

Best thing to do is not to use a 3S receiver pack and get a voltage regualator to use a 2S receiver pack. If this is for a nitro car.
Now if you are using the 3S pack in an electric car with an ESC that has an internal BEC that can handle a 3S then the receiver gets 5-6V from the ESC. The ESC steps down the voltage from either a 2S or 3S depending on the ESC.
Most RTR ESCs can't do a 3S so you will have to determine if yours can.
