I'd do a single 4S, pretty much for the fact that the wiring is going to be less involved and will likely result in less internal resistance.

I'm running one. You can use a universal or a Futaba extension. I bought a Futaba extension off of Tower, but I only needed one that was like 2" long, so I cut one end off and bought these connectors from A Main:

I have some crimpers I use on the race car that worked perfectly. I was able to make very good crimps and it works great without a bunch of extra wiring.
I even shortened my steering servo wire and eliminated all that extra wiring too.
