It's basically to be able to adjust the body (any body) as low as it can be without it rubbing on your tires under heavy cornering and upon landings.
To keep the center of gravity low, you want the body mounted as low as you can. However, you also don't want it rubbing on anything, as tires rubbing on the body will affect handling greatly. So, being able to move the body posts up and down gives you flexibility to find that sweet spot.
