how do you guys set your esc/transmitter dead band settings? should this be done before or after you do the esc calibration? what sort of figure should i have for a toro TS50 and sanwa MXV transmitter? any links/explanations appreciated

Set all throttle settings to their defaults on the transmitter first, then recalibrate the ESC. Use the lowest deadband settings possible that don't cause the ESC to struggle to find neutral.
The red light should either stay solid in neutral or blink if set to zero timing mode for racing.
As far as I can see there is no setting to adjust deadband on the MXV radio, you can use the expo settings to control the throttle feel.
