Will slowing it down make smoke?

The plan is to run a Mini-Z MR-03S around an obstacle course in a small indoor space. So, I need to slow the car beyond what the small pinion can do. Putting a resistor on the + side of the motor should work, but will this damage the ESC?

You might fry the resistor (it's going to dissipate quite a bit of power), but not the ESC. Do you have the ability to turn down the throttle endpoint? That would be much easier than anything else.

Thanks for the feedback. The KT-19 Tx has a not-slow-enough [for me] 'training mode' but no throttle endpoint adjustment.
