also, which is better for the motor? Gearing up, or adding endbell timing?

I don't think 19/72 will actually fit in terms of the pinion being able to contact the spur but it's a relatively minor change from 20/81 so if you can make it physically work, I can't give you a good reason not to try it.

Gear up. Endbell timing moves the torque curve and typically generates proportionally more heat for the same increase in top speed as a gearing change will.

"Gearing up" means to actually decrease the ratio so yes, that would be gearing up

19/72 doesn't fit. What about 19/75? If it fits. Would that be considered gearing up? Hopefully not. I want to gear down a little to get more torque.

20/81 = 4.05 whereas 75/19 = 3.95 so technically, although that difference is small, it would count as "gearing up." What you want to do is run your 19 with your 81.
