I'd disabled with a non-working left hand so I may be able to help. I race with a KO Esprit 4 stick radio, steering on the right stick as normal, for throttle I mounted a KO KIY trigger to the back of the radio wired into the PCB so the radio sees thee normal input and retains all the menu functions. You could rig up a mouth controlled wheel for steering possibly and keep left hand throttle?
