I am pretty new to electric and im programing the esc and was wondering what the voltage shut off should be to the battery do i need the turbo timing if so how much and what about the temp and punch mode thanx in advance.

No boost. None of mine even offer it. Temp shutdown disabled. Voltage shutdown disabled.

Why did you disable temperature and voltage shutdown? We're you having issues with them?
