Default Orion mte engine runs cold

Hey guys, I have a an Orion MTE engine that has a little over a gallon of fuel through it. I am having a hard time getting the temps up past 220 today when I was tuning it, I could hear and see that the engine was way too lean but the motor was still not getting hot. My guess is maybe its shimmed too much. What do some of you veterans out there think? Another thing to mention is I blew a plug the day in a 25 min main. When I checked the temp after they brought my car back to me, so maybe 90 seconds later, the temp was only at 146. Any advise would be great.
Thanks

90 secs is long time for an engine to cool down.. but did you test a different temp gun just to be certain

No I did not. Mine has always worked pretty well and I have used it since and it seems to working fine.

A very smart thing I heard once was tune to performance not temp, reason why is most engines only need temp check in break in or when you have it feeling right and want to see where it's at. If its running hot you should know by the bottom end feel, if it does a whuuhh whuuuuhhh sound instead of a brap sound richen it up, if its loading up or just flooding then u need to lean the top to where it cleans out. Have it running clean but not lean.
