Bro, any high speed ball bearing is only able to sustain a radial load. If install it on the wheel axle, small impact from side is enough to broke it.
So it will be wise if you only install it on the drive train like mid/2spd shaft, diff ass'y and 2 spd assy.
About the seal choice, IMHO we pay the ceramic price to get a minimum friction/inertia :D :sneaky: on the bearing side. Adding any kind of plastic seal will eventually reduce their performance since there is a drag on it.
So metal shielded is the only choice if someone want to upgrade to ceramic bearing.
