Diff Oil Basics

Could someone enlighten me on this subject?
I understand that the heavier the oil the more the 2 out drives run in sync and the thinner the oil the 2 outdrive are independent. What I don't understand is where the center diff comes in. What is the differnce between 7K/10K/5K and 7K/20K/5K?
Much appreciate it.
BTW, I did a search but didn't see any headings.
