Older carbs (the ones without the insert) had three small slots in the spray bar, I found the idle needle had to be further in on these.

You could be right. At the factory the needles are set with a flow bench so each carb may be different.

In any event here is the "official" info from the Trinity site:

Novarossi NS12XX or RS12XXXX (General Carb Settings)
Low Speed: 3.25 turns out
High Speed: 4 turns out
Mid-Range: Flush with the carb body

all those carb setting could only be used as reference as the back pressure from the pipe makes hugh difference on carb adjustment.
