There is not a set number of shims to start with really. Its a trial and error/ re-adjust meathod.

Start from scratch... Get everything clean and start without any shims installed.
Install the diff cups and install the diff in the case.
Check for play. There should only be a very slight amount.
If there is a lot, add a shim or 2 to the NON Geared side, and reinstall.
Continue doing so until it feels a little "notchy."
When it is a little notchy, add one shim to the GEARED side and install.
It should be just about right now.
To verify everything is good, completely install the diff and both halves of the cases along with the 4 screws that hold the cases together. You want it to be just like it were in the truck.
If you have a little play, you should be good to go. If it is still a touch notchy, remove one shim on the NON Geared side and do a full check again.
When you get it right, slap some good grease on the ring gear ( don't be afraid to put a good coat on it), and install it in the truck.
Good To Go!

It takes some time, but if you do it correctly, it should last the life of the truck. Mine did...

^ What he said is accurate. There is no set number of shims.

But...

Start with 2 shims on the drivers side; one on the passenger. Feel it and go from there.
