always performance tune, sound, and smoke, use temp probe just to make sure I'm not in danger zone, also if temp is consistent then suddenly go haywire may indicate something else on car is failing, clutch, or bearing etc.

aaanndd fueeell. bad batch or lack of quality fuel makes it very hard to tune.
if all these things checked, i'll go with performance setting, no need to worried bout the temps, if ur engines performs well, so does the temperature.
