Run what you want, if you have a source for off-road specific plugs that are #7's or #8's keep on buying them. If you are using on-road plugs in an off-road application then you should be quite a bit more concerned about dropping a plug with those than about running a #6 buggy plug lol. I'm sure that you understand the difference in plug design/construction between on-road and off-road specific plugs so I'm not going to get into that. Either way though we make what we make and if it does not meet your requirements then I'm sorry, good luck and happy motoring.
