I haven't had grooves in my rings in a long time, but what I mean by flat rings is that there are no high or low spots. As long as they're flat like what you can order from B-Fast or can do yourself with a lapping stone/plate, then the diff will be pretty smooth. Good thrust balls and rings are more often than not what makes or breaks a smooth diff.
