Throtle management: Just practice and get the feel for how much throtle makes the car break loose. You don't need very much. The worst thing you could do is over-rev your motor.
Surface: Track is smooth asphalt. Rough road isn't good, it only snags on your tires and disrupts your drift. Concrete works well also.
