I'm sure someone can explain it better than I can, but this should get you off to a good start:

540/550 describes the size of the motor can. Larger numbers mean bigger can diameter.

Turns and kv are related, in that the lower turn motors are higher kv. Less turns means higher rpm, with less torque.
