Really it makes no difference.

If you were being super technical, the larger gears will mesh better and maybe transmit more torque (only an issue with tiny, tiny pinions though), the larger gears have a higher rotating mass.

Just worry about the gear ratio, not the gear sizes.

I find that a 75 spur lets you run pretty much any gear ratio you could need, unless you were on a HUGE track.
