The reason we use a 0.9v as cutoff ultimately it's because we don't want the cell to go down to zero volt. If you look at the discharge curve, say on a GFX then you will observe that the majority of the discharge process occurs in the middle portion where the voltage drops slowly. Just before or at 0.9v the relatively flat curve will bend into a very steep plunge, touching 0 volt could be only a matter of seconds. AND YOU DON'T WANT YOUR CELLS TO GO TO ZERO unless you have sound experience with this.
