Both 35a and 60a version is a sensorless esc. So you wont be able to use a sensored motor with it.
For a sensored ESC, you need to look into the 120A version.
Both the 35 and 60A esc's will run a sensored motor. I run a 6.5 novak with a 60A hobbywing esc. It works ok but it does cog a fair bit. Cogging is jerking at low speed. it only has an effect when taking off and you dont notice it after you start off. It is supposed to be worse with low turn motors like mine.
