The best explanations i have heard is from mike boylan of RCTVLIVE.com, he stated that caster is like the swivel wheels of a shopping cart. Because the angle at which the axle is reletive to the chassis (the cart) the wheels will tend freewheel straight. The same principles apply with RC cars. The more caster, the more the wheels will want to freewheel straight.
correct me if i'm wrong, and i probably am but i thought that your explanation refered to trailing axels in 2wd cars.
From my experiance of 2wd cars the more caster you run the less initial turnin you have and the more mid to exit corner steering you have due to the change in camber angle when the wheels are turned...
