Yeah, you kinda have to look up the pin out on the regulator (many are different) but it's normally a common ground, input (+ LiPo in this case), and 5v output (ground and this pin to the receiver).
Just put in a switch (battery side) and you're all set. A switch on the receiver side would still drain the battery.
I was actually thinking about JUST the servo, and keep the receiver at whatever came out of the pack. Just make a little adapter to protect the servo. If I went to a different setup, I could just unplug and go straight back into the receiver.
