Default Ceramic bearing ?'s

I orderd front and rear ceramic bearings for my motor and the front bearing comes with rubber seals on both sides.Do you guys run them with both seals or do you remove the inner seal?I don't really understand the specs boca listed because it is sealed and they are saying that the rpm limit with grease is 50 and with oil it is 59.I don't see how you could get oil in there if it is sealed on both sides?I was also told that ceramic bearings need a special break in procedure?Thanks
