Most guys are running fast in the 130-170*F range depending on winds, ambient temps and track loads. I could see getting into the 190's on a hot day outdoors but hotter than that would indicate overgearing.
Remember, DO NOT USE motor temp as an indicator to proper gearing. Only your lap times will tell you if you are geared right for any given track.

My updated 9.5/19t is fastest at around 155-160*F. And this is with 6min heats that we run out here. You guys are gonna LOVE these f-en motors! I love mine & can't wait for my 10.5 and 13.5's.
