They don't wear that much during a race day, and truing them makes them less likely to chunk.
Pre-trued tires are difficult to sell, as some drivers prefer a different feel, and there's no ideal size to true them to. If the track is loose, a larger sidewall can help generate more side-bite, but if the track has a ton of grip, a smaller sidewall will carry more corner speed. It's a tuning option.
