You can start off with 21/27 pinion and 60/54. If you want more top speed and maintain the low end change your spur gears to 59/53. I think the 6 tooth max split is a rule of thumb due to ratio to maintain a smooth and effective transition from 1st to 2nd gear. As for your other question about do other gears fit, I personally run both GPX4 and Mugen gears, as well as 1st and 2nd gear housings with no problems.
