You are over complicating things too much. For the head clearance if I did it your way I would come to a figure that is totally different again as i shave anything up to 4mm off the bottom of the sleeve itself. Simply remove the plug from the engine and put a piece of solder in so that when the piston comes up it nips it. Measure the nipped piece and then shim accordingly to get 0.6mm. (eg - if the piece of nipped solder is 0.5mm then add 1 0.1mm shim).
