The reason is because it depends on your front caster setting.

If your rear diff is tight and you use a lot of front caster (front upper arm moves more towards behind), you get more off power AND on power steering.

Generally, a looser rear diff will give better off power steering but to a certain extend only lah. Too loose and the car is very unstable like what you've mentioned.
