In Southern California, I use Novarossi #7 long body plug in all seasons. The head shim is 0.4mm. And I use 30% fuel all the time.

In winter, I sometimes use Novarossi #6 long body plug, or reduce the head shim to 0.3mm, with 30% fuel.

Last time I raced in Las Vegas, I used Novarossi #7 long body plug, 0.5mm head shim, and 30% fuel. The engine had less top end, but the temp was steady (230 - 250F) during the race. I had tried 0.4mm during practice, but the temp was a little bit high (250 - 270F) to keep up with those fast guys.
