Can't change the rotation of the motor with just the ESC and motor if it's a sensored motor.

This is a very common problem. You'll see it mostly with Futaba transmitters, but other brands as well. I think it's either software issue or a safety precaution. The ESC should be getting a somewhat neutral signal, but when you go full throttle, the pwm can either go up or down. Some ESC assume it can only go one way and won't recognize when it gets a full throttle signal opposite of what it expects. Most ESC manufacturers write their software to accept a full throttle pwm either up or down from neutral.

The only reason why an ESC might not work that way could be for safety reasons if you calibrated the radio backwards, such that full throttle on the transmitter became full reverse on the ESC. Just a guess.
