The motor is what determines the overall current being drawn through a system, a common misconception is that an ESC "puts out" power. It merely channels it, and when you draw too much current through it and exceed it's limits that is when ESC's burn up. So to answer your original question there is no way to limit the amount of current other than taking your time to monitor operating temps and adjust gearing accordingly.
