A standard 2 cell lipo is typically 8.4V properly charged. The ESC can handle more than 7.4V. You can just charge the HV packs at the regular 8.4 voltage if the ESC really can't handle the marginally higher voltage. Where are you reading that the ESC can only do 7.4V anyway? The manual I just looked at said 4-7 cell (4.8V-8.4V). Does that ESC have lipo cutoff?
