Default Motor Recommendations for Cable Cam

I am looking into building a remote control cable cam with a gimbal for a live shoot. As an individual who has never worked with RC cars, planes, etc, before I would appreciate some recommendations for a motor. The gimbal I want to use is DJI's Ronin MX. As I see it, the motor would have to follow the following requirements:
  • Silent Operation at low and high speeds. This is a church environment so anything above a CPU fan level noise would be unacceptable.
  • Smooth slow operation for smooth panning motion
  • Forward, brake, reversible
  • Last at least 3 hours under light use. (Note: the motor will not be in motion for the whole 3 hours, maybe only 30 min of use time)
  • Take a payload of at least 7kg (This is a bit of an exaggeration and the motor isn't actually supporting all that weight, it is only moving it along a cable)
It seems that I have two styles of motors to choose from. A direct drive brush less gimbal motor. This is smooth and from what I've seen quiet. If I were to find one with a bit of torque, it might do. My concern with a brushless gimbal is that it would be too slow. Any recommendations? My next option would be a sensored brushless motor. I would then take the high RPM and use a belt and pulley system to reduce RPM and increase torque. My concern with the sensered motor would be noise.

I would like the cable cam to move around a minimum speed of .015 meters/ second to a maximum speed of 3 meters/ second. That would mean that the motor would have to vary in revolutions throughout that range. If anybody has any recommendations or advice please include the following:
  • Recommended motor with corresponding ESC
  • Advice to reduce noise output from a motor
  • Advice to get precise and slow controls from a motor
