Can you drill a small hole onto the head then hit an alen key into the hole you have drilled? Has worked on a door lock for me before but it is made out of softer steel

Yeah, that's something I was considering. It's a hex screw to begin with, so would have to force a slightly large one in, or attempt a corner to corner with the flat heat. It also has red loctite, which will make it even more annoying ( probably the cause of the original rounding.
Easy Out, that's the thing, if they go that small, thanks Tyrone.
Last time I drilled a countersunk one out it didn't go great, had to replace the part the shaft was stuck in ( could probably do that, but its vintage :-) ).
As a man who hordes tools, I thought there must be a tool for this
