Many racers use these:
T.O.P. Racing Products #PA-100204 Shim Set 2 x 4mm .1, .2, .3mm (10 ea)
I've recently started using these from McMaster-Carr:
#95610A510 Nylon Flat Washer, M2 Screw Size, 2.2mm ID, 5.0mm OD
You have to cut a flat spot on one side as the OD is too large, but they are easier to use than stacking up all those stainless shims.
