Short answer assuming a few things.

assuming you are looking at gaining speed up to full throttle from a good squirt of the trigger, and assuming you have the RPM range set properly within the esc....

ESC timing will be more efficient and have more torque yet will yeild the same RPM as can timing, it will reach that RPM sooner as well.

Why.....

The ESC adds the timing as the RPM increases, therefore keeping current draw lower, and retaining higher torque at the lower RPM range due to the reduced timing added to the motor at the initial lower throttle values, adding timing increases RPM but decreases Torque, so with can timing it is all at once so at the lower throttle value your efficiency is reduced as well as your torque.
