You are still sending over 9 volts to parts of the esc. A freshly charged pack will not deliver over 9 volts, even right at the start. Why risk it? Even if you just remove one wire from the pack that would stop the current.
It depends on the ESC. Most of em have a power switch that simply cuts the battery power to the ESC. If there's no circuit through the ESC, there's no current flow.
