Assume you have tried the obligatory step of a new sensor cable?

And also assuming that your esc is not programmed in a strange way limiting power. Have you tried to reset it to default settings?

Can your motor/esc run without a sensor cable? If yes, try a run without the sensor cable and see if that changes anything.

If any of that doesn't help (and your drive train is smooth and free running), then it seems like the most effective method to eliminate errors would be to try another esc since you have already tried different motors.
