Simple, when he built the diff he had a lot of air in the oil. When the diff was ran the air gets worked out and oil levels are lower. Also when you open up the case oil sticks to parts so making it look like there is even less.
Work on better methods of putting oil in the diff to get less air and you will have more consistent diff feel.
