Just a little food note :-)... Let's say your set-up is good, problem is not there. How about your clutch set-up?
If clutch setup is to aggressive when traction is low, the car can become a bit difficult to drive and react as you say.
I don't know you set-up, but have you tried looseing the spring 0.2mm?
