I thought you turn electrics on and centre the steering servo trims and install the horn in a straight up and down position.

It's because the servo horn end of the link is higher than the steering arm end. Turning in either direction flattens out the link and that creates some steer in the same direction, making the left/right directions steer differently. Tilting the horn over a little helps balance it out. Common situation for many off road and other steering systems.
