You should be able to run dual 3s as a 6s setup, you'll just need to make up a Y harness to take them back to 1 deans plug, the packs are 35mm thick so they would sit high and I know for a fact that you can buy them locally and there is 2 in stock!

Personally I'd preorder 4300mah as there 25mm thick and will sit lower, they will give you heaps of runtime as 6s but there not in stock, you can preorder them and they should be in by the start of next month.
